I would like it to instead copy the files to the Music folder on my phone's SD card, because that's where I have free space. Is this possible, or is the destination folder hard-coded in to strawberry?</p>

It's not hard-coded, just not specified anywhere so it uses the default storage on the phone. I think this was a restriction in the llibrary used in strawberry (libmtp), and not strawberry itself. But it might be possible in newer versions of libmtp. Unfortunately I have to many things to do so I'm not sure when this can be looked into again.</p>
