The issue appears to be that the output to the external DAC is set by the Windows mixer setting and is not overridden by the Strawberry app as is the case with other players: if for example the output to the DAC is set on the Windows mixer as 24bit/192 khz then the Strawberry app will also follow this setting and outputs everything in this selected bitrate rather than the native bitrate of the source material.
